You can use any email id to during setup the site on your local system because You can update this email id anytime from WordPress general settings (Settings >> General)
In recent version of wordpress, due to security reasons WordPress has disabled direct email update settings from admin, Once you will update the email then a confirmation email will goes ob that email and need to confirm it by click on confirmation link otherwise it will show pending status from admin.
You can update email directly from database by change site-email from option table .
